<p>At any fish counter, the seafood should be displayed either refrigerated or on a bed of fresh ice, that shows no signs of melting. The case should be covered and smell clean, not fishy. Look at the seafood. When you look at a whole fish, the eyes should be clear and slightly bulged. There are only a few types of fish with naturally cloudy eyes, like walleye pike.</p>
<p>Fillets and whole fish should have firm, shiny flesh. Their gills should be bright red and free of any slime. Dull colored flesh could mean the fish is past its prime. When pressed, the meat should spring back. Fillets should not show any drying or darkening around the edges. There should not be any discoloration, such as green or yellow, and there should not appear to be mushy or dry areas.</p>
<p>If you are looking for shellfish, ask to see the tag or label that they are required to come with. These tags are put on sacks and containers of live shellfish and labels are put on packages of shucked shellfish. They contain information like the processor&#8217;s certification number and other pertinent facts.</p>
<p>Toss any oysters, clams, or mussels that are cracked or broken. To check whole ones, tap on the shells. Live shellfish will close up tightly when tapped. If they do not close, pass them by. <p>Steaming is an important part of Mexican cooking. Barbacoa is a dish made by steaming meat by suspending it over water that is boiling in a pit. The meat is usually wrapped in banana or cactus leaves. A steaming bucket was used to cook tamales. The steam keeps the masa coating moist and delicious. Today, of course, they can use special kettles made to cook many tamales at the same time. Sweating was a method used to skin fresh chilies that would be used as stuffing or cut into strips to be added to any number of recipes. Soaking was done to onions and chilies to make them milder. Soaking in water and vinegar or milk for 30 to 60 minutes will help neutralize the heat.</p>
<p>What about the molcajete? A molcajete is a small mortar and pestle used to grind ingredients like herbs or corn. A larger version, known as a metate y mano, is made of stone. It has a slight concave surface on which to grind corn. Before corn masa could be purchased, every family used one of these to prepare their own masa.</p>
<p>Mexican cooks often simmer and boil their food. Vegetables and meat may be placed into a pot to slowly cook all day long. By dinner time, the meat is so tender it falls to pieces. The meat is then used for carnitas, tacos, and many other recipes.</p>

<p>Ceviche is a very popular seafood dish from Mexico. Made with small pieces of raw fish, squid, or shrimp, the recipe includes onion, peppers, salt, and cilantro. The fish is &#8220;cooked&#8221; with lemon or limejuice. The citric acid in the juice changes the proteins in the fish just like cooking. <p>Mexican cuisine is a fusion of Mayan, Aztec and Spanish influences. The French even pitched in a bit. Mexican cuisine enjoys a reputation for spicy foods, but not all of their dishes are hot. Depending on the part of Mexico the recipe is from it may rely more on seafood or beans than peppers.</p>
<p>When Cortez and his Conquistadors arrived in Mexico in 1521 from Spain, they found many different foods that they had never heard of before. Avocados, squash, chocolate, peanuts, beans, corn, vanilla, coconuts, and tomatoes were all new taste sensations to them. They also shared their bounty from Spain. Pork, lamb, beef, garlic, cheese, milk, wine, vinegar, and citrus fruits were all new to the native Mexicans. They lost no time in assimilating these new foods into their cuisine, blending them seamlessly with their staples into new recipes.</p>
<p>Every cuisine can trace back to a foundation of a few ingredients. Mexican cuisine is based on beans, squash, and corn. Each region added their own local products to this foundation. In the Yucatan, seafood and fresh fruit-based sauces were the focus. Northern Mexico has a lot of charcoal grilled meats on the menu. Around Oaxaca, corn was first domesticated by man. There are several ways you can do pasta when you use the crock pot, and it all depends on what recipe you decide to make.</p>
<p>Putting on the Kettle</p>
<p>In some crock pot recipes, you will see them recommend preparing your pasta as directed on the package. Once it is done, you can add it to the crock pot or you can serve your meal on top of the noodles. This approach works best with meats and sauces, as well as recipes like stroganoff.</p>
<p>Other recipes may suggest that you cook your pasta until it is just a little tender before adding it to the crock pot. The pasta finishes in the pot with the rest of your meal for the last half hour or so. This approach works well with dishes like casseroles, chicken Alfredo, and similar recipes. Because the noodles finish up in with the sauce, they will soak up the flavors and seasonings that have been cooking all day.</p>
<p>It is true that cooking your pasta separately takes more work on your part. Instead of just dishing up, you need to boil the water and cook the noodles. This method does make sure your noodles are just right, but it will not work with every crock pot pasta recipe.</p>

<p>Marinades come in three basic types &#8211; acidic, enzymatic, and dairy. Acidic marinades that are too strong can make your food tough, while enzymatic marinades at an overly high strength will turn many steaks to mush. Dairy marinades can improve the tenderness of meat, but they are not necessarily suited to certain kinds of cooking.</p>
<p>Acidic marinades rely on wine, vinegar, and citrus juices to denature the proteins in a steak. This unwinds them. Once they encounter another unwound protein, they will bind together &#8211; the same process that happens with long, slow cooking. Water starts out trapped in these proteins, and the steak is pretty tender. However, too much acid will tighten those protein bonds, squeezing out liquid and toughening the meat.</p>

<p>Some Mexican Food History</p>
<p>There are two important reasons why Mexican food differs so greatly from the standard fare in the United States. One is historical. Unlike the United States, Mexico spent a much longer time as a Spanish colony than did the US. It is true that parts of the US were originally Spanish territories, though the Spanish colonial period lasted for a much briefer length of time here, with the influence of Spanish cuisine being pronounced mostly in regions, which were once Spanish territory, largely those bordering Mexico.</p>
<p>By contrast, what is now the United States was largely colonized by immigrants from Northern Europe, especially the English, Dutch and Germans, with French settlers in some areas and later on, immigrants from eastern Europe and Scandinavia &#8211; and to a lesser extent, literally every other part of the globe.</p>
<p>Colonists who came to Mexico from Europe came by and large from Spain and had a deep and lasting influence on what is now the nation of Mexico. Many classic Mexican recipes are either Spanish and are made much the same way as they are in Europe or are adaptations of Spanish dishes using local ingredients as substitutes for those, which were unavailable in the Americas.</p>
<p>The Spanish are not the only immigrants to Mexico who have made contributions to Mexican food, of course.
